Hey there, Ugly!

An anonymous commenter asked why I don’t ever post pictures of myself. This was about the fourth time I got questions like that, so I guess it’s time to answer that.

First of all, I’m still not exactly at a healthy weight right now. I still have some more to go before I meet my ideal weight, and I don’t want to post any pictures of a skinny me that may trigger anybody or give the wrong impression that I’m glorifying a stick-figure.

However, I will be posting pictures of myself soon sometime, once I meet my target weight. I plan to post my “before and after” pictures, and share a bit more about my eating disorder history in details…and one of them will be revealing my previous weight.

But I don’t feel it is the right time to show myself right now…Part of it stems from my self-ego: I want to have that “after” picture with my “before” picture, you know? Also, I am really afraid I might trigger other girls struggling with eating disorders by showcasing just one ED picture me and not the better picture of me without ED.

Still, my “before and after” pictures will probably be the only time I post pictures of myself. Truthfully, I’m not the kind of person who enjoys taking pictures of myself. I don’t really like to look at myself…I rarely even look into the mirror, so plastering big pictures of me all over my blog will just be so unnatural and awkward for me.

Don’t get me wrong. I love seeing other people’s pictures on their blog…it’s nice to see their beautiful faces behind their writing; it shows a more personal side to them. But it’s just not my thing, and seriously, my face is really not much to look at! Food pictures look waaaay more gorgeous than me! So all of you who have been asking me about my pictures…You asked for it, but you’re gonna be disappointed. xp

Speaking of not much to look at…today we had our weekly prayer group at my house again. I was really fretting by this morning because I still had no idea what to make for dinner. I knew I wanted to make something with polenta, but I couldn’t find any recipes online that really hit my fancy. By noon, I was ready to get pizza delivery or just lay out some bread and cheese. Ever heard of writer’s block? I got the cook’s block.

At the last minute I just decided to use whatever’s in the kitchen. I had grits, tomato sauce, andouille sausages, and several types of leftover cheese. This is what I came up with:

Polenta Casserole with Andouille and Apples

For the polenta:

  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 4 cups water
  • 2 bay leafs
  • 2 cups grits
  • salt and pepper

For the filling:

  • 2 cloves garlic, minced
  • 1 large onion, diced
  • 4 links of Andouille sausages
  • 1/2 large apple, diced
  • 1 8oz tomato sauce
  • 1/4 cup chopped green onions
  • pinch dried rosemary
  • salt and pepper
  • 8 oz whipped cottage cheese

For the topping:

  • 1 cup Mexican four-blend cheese
  • 1 cup cheddar cheese, shredded

For the polenta, just bring everything except the grits to a boil in a large pot. Simmer, then pour in the grits to the  pot in handfuls, whisking constantly until combined. Reduce heat and cook, stirring frequently with a wooden spoon, until water has been absorbed and polenta is thick and creamy. Remove the bay leaves. Pour into a 13-by-9-inch baking dish. Let stand until no longer steaming. Refrigerate, uncovered, until cold and set. Then cut it into strips, cubes, whatever.

For the filling, heat a pan with some oil. Then dump in the garlic, onions, sausages, apples. Let them cook through until soft, then pour in the tomato sauce. Stir, season.

Next, arrange 1/3 of the polenta slices on the bottom of a 9-by-9-inch dish. Pour in half the sausage-apple filling, then spread the cottage cheese on top. Layer the other 1/2 of the remaining polenta slices on top. Top again with the rest of the filling. Then finish off with the rest of the polenta, and sprinkle on all the cheese.

Cover with an aluminum foil and bake in 350 degree oven for about 40-50 minutes. Remove the foil, and bake for about 5 minutes more until the top cheese is nicely melted.

It was really super thick and dense. Quite yummy, though.

The only problem I found was that the polenta was rather mushy. Next time, I’ll just use one layer of the polenta, and then broil it in the oven until it is nice and crunchy before I top it off with the filling and cheese.

    Oh, Sophia, you silly girl. I don’t need to see actual pictures of you to know that you’re BEAUTIFUL!! You’re one of the sharpest, loveliest souls I have been blessed to meet–even if it is just on the blogosphere.

    For me, it’s more of a privacy issue. I’m still pretty spooked that someone I know at school, etc. will find my blog and recognize me, and then know about all the eating issues, blah blah blah. :(

    I was so happy to read this though: “I plan to post my “before and after” pictures”. I LOVE the way you said this sentence–that your goal weight isn’t even a question, that you’re GOING to get there, come hell or high water. You’re an inspiration, dear!

    But about that yummy-looking casserole… Andouille combined with apples and cheese could NEVER be a bad thing. Topped with more cheese?! INVITE ME NOW!! :)

    omg how can you call that casserole ugly? My mouth was watering just by looking at the pics lol….I really wish that I had your talent when it comes to cooking.

    I really admire you and don’t need to see a pic to know how amazing you are. Sophia you could be 10 lbs or 1000 lbs and still be beautiful!

    I love all casseroles and I have no idea why they’re so damn ugly, but I have the same problem trying to get pictures, too! The same with some sauces and other gooey, wet stuff. It just looks kinda cat barfy to me!

    I think it’s perfectly fine if you don’t want to show pictures of yourself right now. Just do whatever you feel is right–it sounds like you have a good plan, and I don’t need pictures to see how beautiful you are! You are so inspirational–truly.

    That casserole sounds yummy! And it doesn’t look bad at all :)

    I look forward to seeing pictures of you. But I don’t need to see a picture to know you’re beautiful (Novice Baker and I think alike). You clearly have a wonderful soul and I bet it shines right through your face.

    It’s hard to photograph casseroles, but they do taste great. When I was a kid one of my favorite casseroles was hamburger dredged in barbecue sauce topped with bisquick and cheese. Very tasty.

    I think people just like to see the face behind the humor and the love and the wisdom :) I totally understand your hesitation though. Please know that I love you just as you are, and I would never judge your weight or your appearance. Ever.
    That said, I’m not big on casseroles unless they’re fusion type casseroles. I had a Mexican casserole once that was good :)

    I usually like to hide behind stuff. LOL. One of the many reason I prefer to work behind the camera rather than in front of it. But it’s all down to personal preference and privacy concerns. You do whatever you feel is right.

    Everytime I make casseroles they usually turn out really weird. If you figure out a way to photograph them without looking ugly. Please let me know. =)

    Man, I think the comment I just wrote got lost in cyberspace. Anyway, what I said was that I think people just want to see the face behind the humor and the love and the wisdom. It’s human curiosity :) I totally understand your reasoning though. I would never judge you by your size, just so you know. Recovery is gradual, and it’s not all about weight (gaining it or losing it).
    To answer your question, I’m not big on casseroles, but I had a Mexican casserole once that was yummy.

    I don’t make casseroles too often, but I made a pretty rockin’ one once with white beans, kale, & whole wheat bread crumbs. Delish.

    You’re gorgeous and photos are odd – sometimes they work and soimetimes they do not help. Do what is right for you. Your polenta – gorgeous and absolutely does work.

    Some of the best foods are the ugliest. I love casseroles because you get a nice big mix of flavors all in one bite. No matter what I’m eating I like to mix it all together (which is why I love your mix it up bowls).

    Can’t wait for your pictures :) You’ll reach goal soon, I’m sure!! I don’t take that many pictures of myself either. ::shrug:: But I always love seeing other bloggies’ pictures.

    I have enough patience to wait until you are ready and willing to share.
    A rectangle baking dish is kind of hard to get it perfect on the pix….but this casserole is absolutely fine.

    sheesh why are people so nosy? i haven’t posted a picture yet for the exact same reason! i actually deleted my myspace and facebook cause i rarely took pictures of myself. i think it’s a problem though cause i don’t have any pictures of important stuff like birthday parties and anniversaries. take your time though cause i am also taking time.

    Oh, Sophia. I admire your goals – I think it’s a fabulous idea to wait to have the “after” picture to go with the “before” – but I’ll bet you’re stunning, m’dear. Can’t wait to see the pics!

    As for casseroles, methinks there’s too much deliciousness going on for them to focus on looking pretty, y’know?

    You won’t find a photo of me on my blog either, for similar reasons– just the other end of the spectrum though. Working on my own little ED… feeling a lot better these days.     i think your casserole has a more of a lasagna feeling to it since your layering, different filling/grain layers…. hehe and its not ugly…. of course your creative side could come up with something beautifuL!
    and yess you are gonna finally put your pic up sometime..and you are gorgeous in my eyes already so nothing would disappoint…cause ive gotten to know you without your picture…

    Yo I am the same way with pictures..most of mine are stolen from my friends cameras! I really am not the girl to go out and ask people to take pictures of me AT ALL! I am scared that it will be a bad picture and that it will ruin my mood! How pathetic am I? But that doesn’t mean I’m not excited to see your beautiful self!!!

    Sophia, this is gonna sound really cheesy..but without even SEEING you before and after pics (great idea btw, and something to keep you striving for that goal! =D), I see you as one of the most beautiful people I’ve come across. Beauty isn’t just skin deep, beauty is humor, it’s wittiness, it’s intelligence and creativity. It’s strength and compassion too! And all of that and more is why I see you as beautiful, and this here is my little rant. =) Hahaha.

    I can definitely understand why you don’t want to plaster pictures of yourself on the internet while you’re still at an unhealthy weight. But lets get serious here, you’re really just so gorgeous, you don’t think we can handle it, right? :P

    My favourite casserole is a “cowboy crock pot.” It’s a mix of potato, corn, carrots, onions (and various other veggies..) beans and smoked mozzarella. It’s awesome comfort food, but also very ugly. Sometimes the ugliest dishes are the tastiest!!

    Yeah, casseroles are definitely ugly, probably because they are filled with such goodness! My favorite casserole is green bean casserole, with the onion straws and all!

    As for the beer. Yes, wine is healthy, but it has been found that one alcoholic beverage is actually beneficial for health (for women) but that is only ONE, any more is bad. For men, it’s two. And this means any type of alcohol, beer, wine, hard liquor :) Great news huh?? But as I said, I can usually stay at one at home, but when I am out I usually drink a draft which is 16-20 ounces (more than the one 12 ounce drink)

    It’s totally ok not to want to plaster pics of u online, but I am sure you are extremely stunning–especially with your cultural background. Regardless if you think your pretty or not, it’s the inside “beauty” that really counts anyway!! =) That is too funny that we both almost made the same casseroles, on the same day too!!     I don’t need to see any pictures of you. It’s not that I wouldn’t love to see your shining face, but I already know what you look like. Your eyes would be full of understanding and a remarkable wisdom for your age. Your lips would be quick to smile. tell jokes, and call something for what it is. Your hands would be ready to help wherever they are needed because that’s just the kind of girl you are.

    One of the beautiful things about these blogs is the ability to get to know someone on a level beyond the outer picture. While God is able to look directly at the heart, that is far more difficult for us on a day to day basis. Through your writing I feel I can safely say that no matter WHAT the heck you actually look like on the outside, I will always think you are beautiful, because I was able to first “get to know you” from the inside.

    Ugly food tastes better!!!! hahaha casseroles, stews, porridges, minced anything… all ugly, all delicious!!!!
    I’m sure this casserole must have satisfied every tummy in your house! It looks delicious and saucy! Great call on the apples, they rock on savory dishes.

    I don’t post photos of myself because I’m so paranoid about the internet (seriously, I was bullied into blogging, I don’t have facebook, not even MSN!). I’ve had a couple of unfortunate episodes with men becomes a tad obessessed about me. I’ve had to get restraining orders and they have managed to still find me, even after I move around the country. So I don’t like to have any more information about me than stricktly necessary… that’s why i don’t even advertise which city I’m in. Men are crazy!

    Your casserole is one of the best look casseroles I have seen! My mom’s always end up looking like a block of vomit, pardon the nasty description.
    I like lasagna, that is considered casserole right? I also love broccoli cheese casserole. Cheese is a good thing.

    And don’t worry about not posting pics of yourself. I’ve had bad experiences with picture posting but I’m too stubborn to stop, I love photography of all sorts too much, and I like to include myself! But maybe it is best that you don’t post pictures, because there are some creepy people out there… o.O

    And I am sooo going to stay away from that boy, you’re right, he probably is up to no good!

    hey, sorry if i offended u with that ques but i was just curious and now dat i kno the reason, i will (and we all will) respect u and yes, it’s totally up to u to decide when it’s the right time. just wanna say i just cant wait to see how great a person u hv become!

    anyway, after following your blog recently, it hit me dat we r quite similar in some ways, in particular the ED thing. yes i hv been battling with it for 4-5 years n it never did leave me completely. but i never become too skinny or needed to be admitted into hospital, just lost a lot of weight.

    food wise, yes i do hate rice, pasta, white bread n any carbs-related food, hate oily n fried food, cant bear the sight of cheese, full-cream milk. fattening biscuits, kuehs, pastry, cake etc. i cant bring myself to hv a full meal, i dun rmbr when was the last time i had one or had any of those above. i count calories for every food dat entered into my stomach. i hate dining with people other than my family n boyfriend because i cant stand the sort of reaction people give on my weird eating habit. they just dun understand, ya kno wat i mean? i resort to eating alone but i enjoy every bit of it. hence there goes my social life.

    well the list goes on n on. im sure u kno wat other similar things we hv in common.
    reading yur blog makes me feel ‘hey, im not alone after all’. do continue blogging with open minds n heart. love every bit of yur post.

    I totally get the photo thing. I don’t have a photo of myself on my blog either. I hate having my photo taken and it SHOWS in the photo.

    I don’t blog about savory foods because it they just don’t photograph well, for me atleast! I think you do a pretty good job with yours!

    I actually don’t like posting pictures of myself either! And I don’t necessarily think you need pictures because your writing and yummy food really shines through and shows who you are. But, you’ll know when the time is right :)
    I recently made a polenta casserole too!! It was a smoky mushroom polenta casserole – http://mytastytravels.blogspot.com/2009/06/new-additions.html
    It was really good, but to get it from being mushy I will make the polenta the night before so that it gets nice and set before putting the topping on. Yours sounds delicious!

    I understand where you’re coming from, I’ve only shown 1 picture of myself on my blog. I’ve never liked seeing myself in photos (even before ED) but I wanted my readers to be able to see who’s writing at least once. Like you I love seeing other bloggers’ photos.

    I really don’t like taking pictures of myself either bc I’m just not photogenic. But I love seeing other peoples’ photos because it gives a glimpse of life outside of the food world. :-) Maybe I’ll be adventurous and try to include more of myself in my blog, haha.

    Hmm casserole…I’ve never tried them. So I don’t have a favorite. And sadly enough, I don’t know what a casserole is! So far I know it’s a square dish of mixed food. Am I right? :D

    I think your casserole is my new favorite!! How ooey-gooey and delicious!! They can be ugly but so pretty to the tastebuds. I love lasagna and my tex-mex lasagna!

    Ok, 1. I totally am naming my daughter after you, you have my favorite name.

    2. Have you ever considered that the voice who is saying these things to you is ED? See those words are words that are in my head on the regular… BUT… I put the pictures up anyway. It’s hard for me, for months there was nothing, not even a real name on my blog… not even a finger in a shot… but I feel like it’s such a good thing to put up pictures. Sometimes, I feel horrific and ED is destroying me on the inside, so I grab one of my baby pics- one of the pics of the innocent, confident little one I was and post that… and remind myself that SHE is who I am, not the person ED wants me to think I am

    The only thing ugly on your blog… is that casserole… JK JK it is soooo not ugly- it’s making my stomach growl!

    I am the same way about photos of myself; I just don’t like to have them taken. Don’t feel pressured to post photos unless you really want to.

    I feel the same way about my photo on my blog. I HATE having my picture taken, and food always looks better than me, even a casserole. :) But I think people just want a face with the blog, for some reason it’s more personable that way. And about the weight thing, I totally understand what you mean. Thats why I only have pictures of me with the camera above my head shooting down at an angle. It’s more forgiving and slimming that way.
